Mike,
There are many opinions on this and the discussion is between conventional (aka "Dino Oil") and synthetic. The synthetic are exponentionally slicker , has smaller molecules and includes detergents. This means if your engine has any possible way for it to get past gaskets, it will. It also means the detergents will *clean" your engine and move any existing sludge deposits around your motor. If your motor has many miles on it, you may not want this to happen. If it is a new rebuilt motor, your seals are probably in good enough shape that they can handle the synthetic with no problem.
Dino oil on the other hand is less likely to do that leak on older engines and doesn't dislodge the sludge that is built up that may be "helping" your gaskets seal.
Assuming that you have your original 327 and that it has not been freshened/tightened up, I would use conventional oil.
